This is lovely served with crackers or triangles of lightly buttered toast as a pre-dinner nibble. Also very nice on toast for breakfast or brunch with crispy bacon, grilled tomato and/or scrambled eggs. Ingredients:
200 grams Parkvale Mushrooms, buttons, cups or flats
Very small knob of butter
15 ml (1 level tsp.) grated onion
85 grams cream cheese – lite or full fat, it makes no difference to flavour
Worcestershire sauce
Salt and pepper
Wipe the Parkvale Mushrooms and chop them finely. Melt the butter and add the mushrooms and grated onion. Cook for 2 minutes until tender. Pour this mixture into a liquidiser with the cream cheese, a few drops Worcestershire sauce, some salt and a shake of pepper. Blend the ingredients well.

Pour into a serving container, cool and refrigerate to set.

Serves 4 – 6

Easy cajun and garlic flats
Simply pour some olive oil (or other) into a frypan and place the Ugly Flats into the pan gill side up. Sprinkle cajun and garlic seasoning over the Ugly Flats and gently fry until the mushrooms are juicy and irresistible, turning once or twice during cooking.

- Enjoy this taste sensation with fruit, as pictured.
- Lovely with a salad.
- Tasty placed on toast with lettuce and grated cheese.
- Slice into bite sized pieces - sprinkle with cheese, supply toothpicks - the perfect appetizer!

Roasted cajun and garlic flats
Place the Ugly Flats (seasoned with cajun and garlic seasoning) into the roasting pan with your other vegetables and meat. Roast until they are dark and crisp around the edges. The absolute ultimate in roast vegetables!

Cajun and Garlic flat topping
Chop the Ugly Flats roughly and place in a frypan (with olive oil or other) with the cajun and garlic seasoning, chopped bacon, and chopped onion. Saute and serve in the following ways:
- lovely on toast
- serve on steak
- makes an interesting topping for salads
- top a stuffed potato
- Stir through your savoury muffin mixture. Bake muffins in the usual way.

Supreme cajun and garlic flats
Prepare and cook your Ugly Flats as with "Easy Cajun and Garlic flats" Pour about 1 cup of cream into the pan at the end of cooking and simmer until the cream reduces a little and thickens. Serve with a sprinkling of fresh herbs. Divine!

Olive and Feta, grated cheese on top.
Spaghetti and diced onion, cheese on top.
Diced bacon, avocado, tomato & spring onion, grated cheese. Serve with a dollop of sour cream.
Capsicum, diced ham and crushed pineapple, cheese on top.

broccoli florets, broken into pieces
capsicum, roughly chopped
olives, roughly chopped and/or leave some whole
cubed feta

I think these make a wonderful breakfast treat - a traditional combination served in a way you’ll love.

2 eggs, beaten lightly
2 slices lean bacon
tomato, chopped roughly
grated tasty cheese

This true gourmet treat is superb served with a glass of wine.

creamy blue vein cheese, chopped
pineapple chunks

These look fabulous and taste great, but have a napkin handy as they can be a little messy to eat.

Experiment and enjoy, topping ideas are only limited by your imagination. Serve your Pizza Flats with a crisp green salad with a few Parkvale La Button mushrooms sliced and tossed through for extra flavour and texture..

Try your Pizza Flat on top of a thick slice of bread or toast to catch all the delicious juices.

Place the mushrooms - gill side up on a grill tray. Pile your choice of toppings onto the mushrooms, season well and bake at 180 C for about 10-15 minutes - or until you can resist no longer!

Pepper and mushroom salad

4 - 6 medium sized stuffing cup mushrooms
1/2 onion chopped finely
Four rashers of bacon, rind removed - chopped roughly
Wholemeal breadcrumbs - enough to make a course mix - about 1/2 cup
Plenty of seasoning - fresh herbs of your choice are also lovely if available
The stalks of the cups to be stuffed, plus 2 more mushrooms all chopped finely
Chopped garlic - optional
Cream to bind
Small amount of olive oil
Slices of melting cheese - edam or mozzarella - enough to place a layer in the bottom of each cup mushroom
Extra oil, seasoned.

These stuffed mushrooms are delicious and quite different, with a burst of melted cheese being the perfect contrast to the other superb flavours of this easy to prepare treat.

Remove the stalks from the mushrooms and chop finely, together with the 2 other mushrooms. Pour a small amount of olive oil in a pan and heat. Place chopped onion, chopped bacon, chopped mushroom, seasoning, and garlic in the oil and sauté until it looks great and smells divine. Take off the heat and add the breadcrumbs and seasoning. Bind with the cream, so that the mix holds together well and is not dry. Place a layer of the cheese in each cup mushroom and then fill with the stuffing mix. Roll the bottom of each filled mushroom in the seasoned oil and place on a grill rack.

Bake in a pre-heated oven, 180 C until the mushrooms are tender and browned on the top. Delightful served with salad or as an appetizer for a more formal occasion.

1 kg small Parkvale Gourmet Brown La Button mushrooms + water to cover

Simmer the Parkvale La Button mushrooms in the water until just tender – approximately 3 minutes. Strain.

300 mils wine vinegar
2 large cloves garlic
2 bay leaves
1 onion – diced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon oil
1 teaspoon pickling spice
4 dessertspoons brown sugar – more or less, depending on personal taste.

These are excellent served with a selection of cheeses, cold meats, crackers; whatever takes your fancy. Especially good with Feta cheese and olives .  Lovely tossed through a salad also.

Pickled Parkvale La Buttons need to be eaten within 2 – 3 weeks, but are so delicious they will be gone within one week!!

Dice the onion, crush the garlic, and lightly sauté them in the oil. Add all other ingredients. Stir to dissolve the brown sugar. Pour over the mushrooms and leave for several hours in the refrigerator before eating.

Mushrooms are available at the Mushroom Farm at Parkvale about 4km east of Carterton.
